Meet Chef, Matt Mottor!
Matthew Mottor is a passionate chef and entrepreneur who turned a childhood curiosity for food into a thriving culinary career. From making mustard sandwiches as a preschooler to filleting fish he caught himself, Matthew’s early independence helped shape his relentless work ethic. He refined his culinary skills at Southern New Hampshire University and gained national recognition through competition, placing third in the United States at the 2005 SkillsUSA Culinary Competition, along with earning multiple medals in American Culinary Federation solo and team competitions between 2004 and 2009.
Matthew spent 13 years at Jiminy Peak Mountain Resort, where he rose from Executive Chef to Food and Beverage Director, developing expertise in menu creation, operations, and team leadership. In 2020, he founded Berkshire Culinary Group, which has grown every year since its inception, and led the rebranding of Shire Breu-Hous into Shire Tavern. His mission is to create memorable dining experiences through thoughtfully crafted menus that evoke nostalgia, while building community and inspiring others through food.
Meet BCG General Manager, Terry Bishop!
A standout baseball player in high school, Terry was drafted in 1996 out of college and began his professional baseball career that same year. Following the birth of his daughter in 1997, he chose to pivot professionally, channeling his discipline and drive into the food and beverage industry.
Throughout the early 2000s in New Jersey, Terry established himself as one of the region’s top mixologists, competing in numerous cocktail competitions and earning national recognition with a signature cocktail published by Rain Vodka. His athletic achievements were later honored with inductions into both the New England Baseball Hall of Fame and the UNICO Baseball Hall of Fame.
In 2018, Terry opened Biggins Diggins, which quickly became a beloved and highly respected destination in Berkshire County. Under his leadership, the restaurant made history as one of the first in the county to offer a fully gluten free menu, reflecting Terry’s deep commitment to allergen awareness and inclusive dining. Biggins Diggins was also the first Berkshire County restaurant to be featured on America’s Best Restaurants, won Best of the Berkshires for Takeout during the pandemic when takeout was the only option, and earned Best of the Berkshires Best Food Truck.
Since closing the restaurant, Terry has continued to refine his craft, working closely with award winning, classically trained chef Matt Mottor. Together, they have focused on culinary excellence, service innovation, and elevated guest experiences. Terry now brings this experience forward as he leads Berkshire Hills Country Club with vision, integrity, and a strong commitment to community.
